Cucumber Yogurt Dip: A Kidney Friendly Tzatziki Recipe

Spring is in the air, and what better way to welcome the warmer days ahead than with a refreshing cucumber yogurt dip with Mediterranean flair?

This Mediterranean classic has been a staple in our kidney health programs for years, and we're excited to finally share it with you all!

What makes this tzatziki special isn't just its delicious taste – it's how perfectly it aligns with kidney-friendly eating patterns while delivering a burst of fresh flavor. We made it plant-based and low oxalate using coconut yogurt, but it's easily adaptable according to your taste and needs:

  • For those following low protein diets, feel free to swap coconut yogurt for other neutral-tasting unsweetened plant yogurt such as cashew or almond yogurt.
  • Watching your oxalate intake or have a history of kidney stones? Keep in mind cashew or almond products will be higher in oxalates, so either choose coconut yogurt or dairy yogurt.
  • For our PKD patients following a ketogenic diet and have room for more animal proteins, using traditional Greek yogurt also works well.

Ingredients

  • 1/4 large Cucumber
  • 1 cup Plain Unsweetened Coconut Yogurt or Greek Yogurt
  • 1 clove Garlic minced
  • 1/2 Lemon juiced
  • 1 1/2 tbsps Extra Virgin Olive Oil
  • 2 tbsps Mint Leaves fresh, finely chopped
  • 1/8 tsp Sea Salt optional

Instructions

  • Slice the cucumber in half lengthwise. Scoop out the seeds and discard. Grate the cucumber flesh then squeeze out as much liquid as possible. Transfer to a mixing bowl.
  • Stir in yogurt, minced garlic, lemon juice, olive oil, mint and sea salt until thoroughly combined. Transfer to a serving bowl.
  • Serve the dip with vegetable sticks (ie. cucumbers, carrots, jicama, etc.) on the side. Enjoy!

Notes

  • If your coconut yogurt is too runny, strain it overnight by placing it in a cheesecloth-lined fine mesh strainer positioned over a bowl. The excess liquid will drain away, leaving you with thicker yogurt.
  • Alternatively, you can use other unsweetened plant yogurts or Greek yogurt as recommended.
