Overnight Oats

Creamy and dreamy overnight oats! Make this dish the night before for a delicious breakfast that is ready to eat in the morning. Perfect for those busy mornings when you need something fast!
- 1.5 Cups Rolled Oats
- 1 Cup canned coconut milk
- 1.5 Cups Unsweetened Almond Milk
- 2 Tbsp. Chia Seeds
- Optional: 1/2 tsp. ground cinnamon
- 1. In a mason jar or container, add all ingredients and stir to combine
- 2. Seal or cover and leave in the refrigerator for at least 8 hours or overnight
- 3. Divide into serving bowls and top with desired toppings (berries, nuts, seeds, coconut flakes)
Variations:
- Higher Calorie: Add nuts, seeds, or coconut flakes as toppings.
- Higher Protein: Add nuts, seeds, or nut/seed butter as toppings. Use soy milk instead of almond milk.
- PB/J: Add fresh or frozen mixed berries and peanut butter as toppings.
- Chocolate: Mix in 1/4 C. of cocoa powder.
- Pumpkin Pie: Substitute coconut milk for pumpkin puree, mix in 2 tsp. pumpkin pie spice, and add chopped pecan as topping.
