Quick low potassium snacks are a must for many people on a restricted kidney diet. With the weather getting warmer and the days longer, I am craving summer flavors and sweet treats that fit my summery mood. And what fruit doesn’t scream more summer than the sweet, juiciness of a phenomenally flavorful pineapple?

While not everyone needs a potassium restriction, for those that do need a low potassium restriction, this is a quick and easy recipe.

Ready for it? Pineapple. Chili flakes. That’s it. While fresh pineapple is a knock-out snack anyways, adding a touch of chili flakes can certainly mix things up.

Bonus tip! Pineapple isn’t the only fruit that can benefit from a chili pepper dusting. Adding a touch of chili flakes to almost any very sweet fruit (mango, orange, etc…) can work as well.

Is pineapple good for kidney disease?

Pineapple is a great choice for people that have some dietary limitations no matter what stage of kidney disease. Fresh pineapple rolls in at 178 mg of potassium for a cup with so generally is considered a “low potassium” fruit. It also is a great source of vitamin C and manganese providing almost 75% of the amount you need in a day.
