November Bulletin Board: What's on YOUR plate?

    November is here!!  I usually use a handout about foods to enjoy on Thanksgiving with this board.  I always initiate any conversation around the holidays by asking about favorite/special foods rather than what people plan to eat.   Talking about favorites is always a great way to really find out what my patients like to eat and talk about substitutes or portion size as appropriate.

    On the board:

    Feast on these foods: Tossed salad, Turkey, Jell-O mold, glazed carrots, cranberry sauce, dinner roll, cornbread dressing, cherry pie, apple pie

    Limit These: Pecan pie, olives, mashed potatoes, sweet potato and pumpkin pie, potato salad, candied yams.  And apparently I left two plates empty, which I didn’t realize until this very minute when I wrote this post.  You could add ice-cream as another “limit” food or think of other regional foods (many of my patients like “chitlins” at the holidays here in the South).  I also put a salt shaker and Coke/Pepsi up as a reminder.

    Thanksgiving Tips Yellow Signs:

    Tip #1: Double-boil your potatoes, swet potatoes, and yams to leach out extra potassium. (Using a large pot, peel and dice your potatoes as normal.  Boil in a large amount of water for 10 minutes.  Refill your pot with fresh water and boil again until potatoes desired consistency).

    Tip #2 Remember TOO MUCH FLUID will put you in the hospital. (Use small glasses at your meal, suck on ice, or fill you glass only once to keep the fluids at bay!)

    Tip #3 Remember TOO MUCH POTASSIUM will put you in the hospital.  (If you choose a high potassium food then keep your portion small!)

    Tip#4 Take a couple extra phosphate binding pills with your meal. (You may be eating more than usual, so you’ll need extra phosphate binding power!)
