Ingredients

Salad:

  • 1 Cup Cucumber finely diced
  • 1 Cup Tomato finely diced
  • 1 Cup Peppers finely diced
  • 1/4 Cup Onion finely diced
  • 1/4 Cup Radish finely diced
  • 1/4 Cup Fresh parsley or mint chopped

Zesty lemon Dressing:

  • 1/2 Lemon squeezed
  • 1 Tbsp. White or Apple cider vinegar
  • 1 Tbsp. Extra virgin olive oil
  • 1/2 Clove Garlic minced, more to taste
  • Salt and pepper to taste

Instructions

  • Wash and cut all vegetables, mix in a bowl.
  • In a small bowl, whisk all dressing ingredients and add to vegetables.
  • Toss to combine.
