Tropical Coconut Oatmeal

Try this delicious tropical twist on oatmeal for a new way to start the day! We used Coconut milk beverage in this recipe to really play up the tropical flavor, but any plant-based milk will work.

Ingredients

  • 2 cups coconut milk beverage
  • 1 cup rolled oats
  • 1 1/2 tablespoon chia seeds
  • 1 mango peeled, seeded, and cubed
  • 1/4 cup unsweetened coconut flakes

Instructions

  • In a saucepan over medium-high heat, combine coconut milk beverage or light coconut milk, oats, and chia seeds.
  • Bring to a boil while stirring, then reduce heat and simmer for about 5-10 minutes or until all the liquid has been absorbed and all the oats are cooked.
  • Divide into serving bowls and top with cubed mangoes and coconut flakes.

Variations:

  • Higher Calorie: Add a tablespoon of coconut butter as topping.
  • Higher Protein: Add a sprinkle of chopped almonds, brazil nuts, or cashews as toppings.
  • Lower Potassium: Substitute 1½ cup pineapple for the mango and use rice milk instead of coconut milk beverage to lower potassium to ~380 mg per serving.

Notes

You may have heard that nuts, beans, and whole grains are not a great choice for a kidney-friendly diet because they are high in phosphorus.  Wondering why we include them in many of our recipes?  We include beans, nuts, and whole grains because only about 40% of phosphorus found in these plant foods are absorbed by humans.
