Blackberry Bliss Bombs

These blackberry bliss bombs, one of my favorites, are not only easy to prep but they are darn delicious!

Ingredients

  • 1 cup coconut butter slightly softened
  • ½ cup coconut oil slightly softened (not melted)
  • 1 cup blackberries fresh or frozen
  • 1/2 lemon juiced
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon monk fruit sweetener or to taste
  • dash of sea salt

Instructions

  • Add all ingredients to a food processor or high-speed blender. Blend until well mixed and smooth in texture. Make sure not to over blend, the oil will get warm and separate.
  • Line a 6x6- inch container with parchment paper. Alternatively, use a silicon fat bomb mold or ice cube tray*.  Scoop berry mixture into container and smooth until evenly distributed.
  • Place in the freezer for 30 minutes or in the fridge for up to 2 hours to set and firm up.
  • Slice into 14 equal parts.

Variations:

  • Other Berries: Feel free to substitute blackberries for any of your favorite berries or mix it up and use half blackberries and half blueberries!
  • No Monk fruit sweetener: replace with 1/2 teaspoon liquid stevia or to taste.
  • No lemon:
    replace with equal parts lime juice and zest.
