Berry Beet Smoothie Bowl

Ingredients

  • 1 medium beet about 2-inch diameter, peeled and grated
  • 1 cup frozen mango
  • 1 cup frozen raspberries
  • 1 cup unsweetened rice milk
  • 1-2 teaspoons maple syrup
  • 1/2 cup mixed berries fresh or thawed if frozen
  • 2 tablespoon slivered almonds

Instructions

  • Add grated beet, frozen mango, raspberries, rice milk, and maple syrup into blender.  Blend until smooth and thick.
  • Pour mixture into 2 bowls and top with mixed berries and a sprinkle of almonds. Enjoy!

Variations:

  • Higher Calorie: Drizzle in a tablespoon of coconut oil through the hole in the blender lid while blending.
  • Lower Potassium: Reduce portion size to 1 cup to lower potassium to 365 mg. Substituting frozen pineapple for frozen mango further lowers potassium to 300 mg per serving.

Notes

1) This smoothie is high in potassium.  If you need to limit potassium, we recommend swapping frozen pineapple for frozen mango.
2) The raw beet may not puree well if you don't have a high powered blender. If you prefer, you can use 1 cup of cooked or canned beet, this will yield a smoother texture.
