Ingredients

  • 1 cup canned coconut milk refrigerated then mixed well before use
  • 1 cup unsweetened almond milk cold
  • 2 cups pineapple diced, cold or frozen
  • 1/2 inch piece of ginger peeled and grated
  • 1 teaspoon turmeric powder
  • Optional: 1-3 teaspoons maple syrup for additional sweetness

Instructions

  • Add all ingredients into a blender. Blend until smooth
  • For a thicker consistency, use more coconut milk and less almond milk.  Adjust consistency as desired.
  • Optional: add sweetener to taste.

Variations:

  • Higher Calorie: Add a tablespoon of coconut butter or coconut flakes before blending.
  • Higher Protein: Use soy milk instead of almond milk 

Notes

** This recipe is considered HIGH potassium so for some people with a potassium restriction, portion should be decreased by half or you can replace the coconut milk with almond milk to significantly reduce overall potassium intake. We recommend if you replace the coconut milk that you add 1 tbsp of coconut oil and some coconut flakes on top to get the same "pina colada" taste. **
